This beautiful salad is a crowd-pleaser. This was an accidental “gem” I discovered one day while cleaning out the fridge. I only had a bunch of purple kale (green will work as well, but purple is prettier), a bag of carrots and some homemade honey mustard dressing left. I had the shredder out so I decided to shred the carrots and tossed the salad. One bite and I thought, “oh, this would be good with some shredded goat cheese.” So I added that. And tried another bite and I realized, “this would be so good with bacon and slivered almonds for a crunch”. So I added the bacon and almonds to it for breakfast the next morning and it was SO good. Now I try to ALWAYS have this salad sitting in the fridge. Even fast-food addicts love it! The honey mustard dressing is from my friend Heidi and one of my all-time favorites. … More Kale & Carrot Salad – A must have!
This was one of my favorite dips back in the day before I was gluten-free, sugar-free and dairy-free. When I found the goat “creamy cheese” at Trader Joes I knew I could recreate my mouth’s favorite magic in a healthy way! This is a healthy food my kids LOVE. It is also a party favorite, so make a double-batch if you want to serve more than 4! … More Goat Cheese Chili-Corn Dip
This recipe is from my mom when she first began the Equilibrium Diet. These are ketogenic and grain-free waffles. Paired with collard greens and bacon (turkey or not), it has become one of my favorite all-time breakfasts. When I eat two of these little waffles and collard greens, I am so full I can’t eat ANYTHING again until dinnertime (even if that’s 10 hours later)! They are loaded with protein and fat, just what the body needs! … More Cashew Waffles (gluten-free, dairy-free, sugar-free)
